Sweet Sour Pork Ribs

Serve for 4 People

Meat: Ribs 800g, Star Anise 5g, Onion 60g, Ginger 50g

 

Put all ribs in cold water, heat until water boiling, when water started to boil, remove the impurities and turn the heat to median level, add Star Anise, Onion and Ginger in the broth. Simmer for at least 1 hour (to reduce the pork fat), take out the ribs. Heat another pan with some peanut oil; sear the two sides of the ribs to crunchy.

 

Sauce: Dark Rice Vinegar or Cider vinegar 60g, Soy sauce 50g, Sugar 50g, Corn Starch 10g

 

Put sugar in a little pot, some drops of water, heat until the sugar start to turn caramelized brown, deglaze the caramel with vinegar (watch out, caramel burns!). Add 1 or 2 tablespoons broth, low heat to let the acidity of the vinegar vaporize. Add soy sauce; adjust the saltiness with a bit more salt if needed. In a small bowl, put 10g corn starch, add 1 or 2 tablespoons of cold water, mix until the starch dissolve in water, then mix the cold starch water with the sauce on low heat, wait until the sauce turn thick.

 

Finish: Sesame seeds, Green Onion

 

Heat the ribs in sauce and low heat for couple of minutes, cuts green onion for decoration. In a dish, place the ribs with some sauce on top, spread sesame seeds and green onion.
